Truly, Deeply, Chocolate


With Love Day around the corner I decided to do a series about desserts that would involve chocolate in some form because let’s face it: Valentine’s Day + chocolate= bliss. Or so I’m told. So we’ll call this series Truly, Deeply, Chocolate.

Now, my peeps, you have to keep in mind that I will make these delightful delights (ha!) while the noisemakers roam around the house so we have to keep it fairly simple and quick, rock the pantry as much as possible yet not compromise the final result. Bk (before kids) I would have gone straight for the croquembouche and then pray it wouldn’t topple down but today let’s start with

Foolproof Chocolate Fudge

3 cups (18 oz.) semi-sweet chocolate chips

1 (14 oz.) can  sweetened condensed milk

1/2 to 1 cups chopped nuts (optional)

1 1/2 teaspoons vanilla extract

Chips+salt+condensed milk in a glass bowl and microwave on high for 3 minutes or until chips are melted. You will have to stir every minute  or so otherwise the chocolate will scorch and that is no good.

Add the other ingredients and spread them in a pan (9×9, 8×8 or 9×13 however thick you want it) lined with foil reaching over the edges. Chill for 2 hours or so. Cut up and share. Make it for someone you love-yourself, your neighbors, your honey or anyone.
